Physiological effects
- Sterols are a circle-like combination of carbon, hydrogen and oxygen, of which the most common is animal-based cholesterol. Cholesterol is produced by the human body and it does not disintegrate but instead secretes with bile into the small intestine. Cholesterol is necessary for the human body because it gives structure to the cells’ cell membrane. Excess cholesterol accumulates in the blood vessels leading to arterioclerosis. If the blood’s cholesterol level is more than 5mmol/l, it is increased.
- Cholesterol can only be received from animal-based products in the diet. In the blood, cholesterol appears as a form of lipoproteins, where as HDL and LDL-cholesterol are the most important. LDL-cholesterol (bad cholesterol) oxidizes subtly and may cause congesting of the blood vessels.
- Plant sterols are fat-like combinations appearing in all plants. The composition resembles cholesterol. Plantsterols, such as betasitosterol, exits easily when cooking.
- Plant sterols’ effect is based on decreasing the absorption of the cholesterol from the digestive tract into the blood circulation thus decreasing the blood’s cholesterol level.
